CAMEMBERT FERMIER

A true Norman Camembert is a work of art: creamy, rish and flavorful, with a chalk-white heart. It's rind should bear the characteristic reddish stains and stripes that reveal perfect ripening.

Master cheesemakers Bernard and Francois Capt of Old Europe Cheese, Inc. use the centuries-old method of crafting artisanal, farm-style Camembert, a method brought with them from Normandy, France. The unique process involved includes many time-intensive procedures such as: 24 hours of milk maturation time (two seperate maturation periods are used to prepare the milk)
  • a long coagulation period
  • hand cutting and molding
  • 15 days of special curing A schedule is printed on the back of each box so customers know when their cheese is at each stage of ripening.
