Fontina Flan

Ingredients
  • 1 stick (4 oz) butter
  • 1 cup flour
  • 6 eggs
  • 1 cup (8 oz) Reny Picot Fontina, cut into small pieces
  • salt, nutmeg
Instructions

Preheat oven to 350¡ F. Bring 1 cup of water to a boil, adding the butter and a pinch of salt. Once the water begins to boil, add the flour. Stir continuously with a wooden spoon for 10 minutes until the mixture starts to pull away from the bottom and sides of the pan.

Remove from heat and add, one at a time, the eggs. Stir continuously. Then add the Fontina and a pinch of nutmeg. Once mixed, pour the batter into a medium-sized dish that has been buttered and floured (or sprayed with a non-stick spray).

Bake for 30 minutes. The flan should be puffed and golden. Let rest a few minutes before serving. Serves 8
