Manchego Cheese Straws

Ingredients
  • 1/4 lb all butter puff pastry, thawed, if frozen
  • Flour
  • 1/4 cup grated Reny Picot Manchego cheese (about 1 oz)
  • Sweet Spanish or Hungarian Paprika
Instructions

Preheat oven to 500¡ F. On a lightly floured surface, roll the puff pastry to an 8" square, approximately 1/8" thick. Sprinkle evenly with the cheese and press it lightly into the dough. Sprinkle lightly with paprika. Roll the dough into a cylinder and lightly sprinkle the work surface with flour. Roll the cylinder out into an 8" square again. Cut the square in half crosswise into 1/4" strips. Place the strips on a lightly buttered heavy baking sheet. Bake the cheese straws for about 5 minutes, or until puffed, cooked through and golden brown. Transfer to a rack to cool.
